Yummy Tofu Scramble

I've been trying to work on some more vegetarian-friendly recipes for my cookbook, and I think I have a winner with this tofu scramble with warm Indian spices. I wish I could've taken some pictures, but alas, my camera was stolen some months ago (along with my TV, which I've since replaced).

1 block firm tofu, excess moisture removed
3 cups fresh spinach, washed
1 cup diced onion
1 cup diced tomato (canned is fine)
4 cloves garlic, minced
1 tablespoon ginger
1 teaspoon cumin seeds
1 teaspoon hot Madras curry powder
2 tablespoons oil
salt and pepper to taste

Heat the oil on medium heat and soften the onions for about 5 minutes. Add the garlic and cook another 2-3 minutes.
Put in the cumin seeds, ginger, and curry powder. Stir to coat the onions and garlic with the spices.
Turn up the heat to medium high and add the spinach and let it wilt down, about 5 minutes.
Add the tomatoes and stir.
Crumble the tofu into the vegetable and spice mixture and stir to coat. Allow the tofu to heat through. Season with salt and pepper and serve.

Serves 4-6, depending on whether it's a main or a side.

My WitchVox article has been read almost a many times in a week as my blog has in the last month. That's pretty funny. I wish some of those people would follow the link to the blog and read it too.

OH! By the way, I got my nose pierced (again) in New Orleans and got a new tattoo. I'll put up pics/videos as soon as I get them.

Let the Good Times Roll!

I'm still in New Orleans at the TESOL Conference. I decided not to go to any workshops today because 1.) There aren't many I'm interested in today, 2.) I don't want to walk to the Hilton because my knee hurts, and 3.) I'm just tired and lazy.

I've learned a few interesting things to take back to AR with me, and I've purchased some fun stuff too. I've also eaten crawfish etouffe, seafood gumbo, and red beans and rice. Yum, yum!

I intended to write a newsletter for Ostara. That may or may not happen because an old, old friend from home is supposed to come and visit me next week. Next week is my spring break, though, so if I have time I will get something written up and sent.

I hope everyone enjoys the Super Moon and has a blessed Ostara.

Happy to be where I am

I just read from Hurriyet Daily News that Blogger has been banned in Turkey. Bleah. I'm glad I'm living in America right now. First YouTube, now Blogger. Those aren't the only two blocked sites, either.
